A Shrub is a refreshing summer drink that is equal parts fruit, sugar, and vinegar. Once the syrup is made, it can be mixed with club soda to make a drink. You can also mix in rum, gin, or vodka for an alcoholic drink.
While you should avoid using rotted or moldy fruit, shrubs are best made with fruit that is a little past its prime. This makes it a great way to preserve fruit such as berries and peaches. Once the syrup is made, it can keep in the refrigerator for several weeks.
Serves: As many as you like
Step by Step Instructions
- Mix the fruit with an equal amount of sugar. Place in refrigerator until sugar dissolves, stirring every day.
- Mash up the fruit and sugar mixture and pour through a sieve. Add vinegar in the same amount as the fruit and the sugar. The best vinegars to use are red wine vinegar, apple cider vinegar, and balsamic vinegar.
- Stir and place bottle in the fridge. Let sit for a day or two. To use, mix about 2 tbsp. syrup into club soda and serve with ice.
