Chestnuts

Most chestnuts you buy from the store are shipped from China or Italy and are not kept refrigerated so they dry out. Dunstan Chestnuts from The Herb Lady are an American-Chinese hybrid that keeps the best characteristics of American Chestnuts that were wiped out by a blight at the turn of the century.

TO STORE FRESH CHESTNUTS – Because chestnuts are high in carbohydrate, they must be kept in refrigeration and will spoil if kept out at room temperature. Store in a breathable (paper) or open plastic grocery bag in the vegetable bin of the refrigerator. If stored this way they should last for 2-3 months. Do not store in a closed zip lock bag, as they will mold. They get sweeter if you leave them on your counter for 2-3 days before you use them.

Step by Step Instructions
  1. Put them in a pot of water and remove from heat when it comes to a boil. This makes the shells easier to score with a knife so they don't blow up when you roast them.
  2. Score shells with a knife.
  3. Roast them in your oven at 350 for 20-30 minutes. They should split wide where you scored them.
