Shrub (drink)

A Shrub is a refreshing summer drink that is equal parts fruit, sugar, and vinegar. Once the syrup is made, it can be mixed with club soda to make a drink. You can also mix in rum, gin, or vodka for an alcoholic drink.

While you should avoid using rotted or moldy fruit, shrubs are best made with fruit that is a little past its prime. This makes it a great way to preserve fruit such as berries and peaches. Once the syrup is made, it can keep in the refrigerator for several weeks.
