SPICY SALMON WITH BOK CHOY AND RICE
Cook 1 cup long grain white rice. Combine 2 tbsp. honey, 1 tbsp. soy sauce, and 1/4 tsp. crushed red pepper. On a foil lined rimmed baking sheet, broil salmon filet until opaque, about 8-10 min. basting with the honey mixture during the last 3 min. Steam 1 lb. bok choy cut into pieces, until tender, 8-10 min. Serve bok choy with salmon and rice.

Merry Christmas! The market is open!
I had a great time tonight with dinner guests, and they were so impressed with the vegetables I served, fresh from Market2Go. We had roasted sweet potatoes, carrots, beets, and onions (all roasted together in a 9×13 pan) and steamed broccoli. I have finally figured out the secret to roasting veggies. Cut them in about 1 inch pieces, and keep the sizes consistent so everything will be ready at the same time. Spray your dish with cooking spray, then cover the veggies with about 1/4 cup good olive oil. Toss to coat, and roast at 425 degrees about 30 minutes. Take out and stir, then continue roasting until veggies are tender, about 15 more minutes. So good!
Have you noticed our new seafood offerings? We’ve always had salmon, but now we’ve added shrimp and halibut. Be sure to get your fresh seafood for New Year’s Eve from us!

Market 2 Go Christmas Schedule
Many of you have asked — the market will be open as usual over the next 2 weeks. We will NOT close the Thursday between Christmas and New Year’s.
This week is your last chance before Christmas to order gifts, and we have a great selection of local food as well as gift certificates.
Thanks to Lisa Guidos and Denise McGuire for offering to help at the Sugar Magnolia pickup this week. We also need volunteers for Dec. 27 and Jan. 3 while Katy is home for Christmas holidays.
