Wow! Did you see the veggies on the tables this week? We have some beautiful carrots, beets, kale, swiss chard and Vidalia salad onions—just to name a few of the veggies in season! What about the trees? Southern Native Planting delivered some beautiful apple trees — in fact, we planted one in our yard last weekend. Hunter Cattle brought their award-winning sausage (congrats to the Fergusons!), we had bakery goods, laundry soap, pecans, farm fresh eggs, and SO MUCH MORE! I love carrots…and we have some beautiful ones at Statesboro Market2Go! While I love to roast them or boil them (adding a little sweetener and ginger), I have to admit my favorite way to eat carrots is in carrot salad. A sweet lady at our church made a carrot salad that Stacey really liked, so I asked for her recipe. After she gave me the general ingredients (a little of this, then some of that), she asked me if I had a pretty bowl. She obviously doesn’t know my mother if she had to ask if I have a pretty bowl!! (My mother has given me MANY beautiful bowls over the years!) What I’ve found is even more important than a pretty bowl when making carrot salad is a food processor. Grate your carrots in the food processor, add a little mayo, a little sweetener, some raisins or craisins, and some chopped walnuts or pecans (some people also add drained pineapple tidbits). Delicious!! Don’t add too much mayo — it should seem just a little dry — because the carrots will add their own moisture as they sit. Then be sure to serve it in a PRETTY BOWL!!

The market is OPEN!

Seems like 2 things we have plenty of are cabbage and carrots. This week I’ll share a coleslaw dressing recipe. I grate a head of cabbage and maybe one (sometimes 2) carrots in my food chopper. Then I mix the grated veggies with the dressing. SO GOOD!
DRESSING:
1 1/4 cup mayo
1/3 cup sugar
1/4 cup white vinegar
1/4 tsp. celery seed
1/2 tsp. salt
1/4 tsp. pepper
