Classic Southern Cornbread

Classic Southern Cornbread is best made with a cast iron skillet. Let the skillet warm up in the oven and melt some butter in it so that a nice crust will form. Some versions of this recipe use bacon drippings instead of or in addition to the butter. Adjust the amount of buttermilk to make a thick batter.
You can also use self-rising cornmeal and omit the baking powder and soda.

Serves: 4-6

2 cups cornmeal      View Available Products
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 egg      View Available Products
1 3/4 cups buttermilk      View Available Products
2 tbsp butter or bacon drippings      View Available Products

Step by Step Instructions
  1. Preheat cast iron skillet to 400 degrees and melt butter or bacon drippings.
  2. In large bowl, mix dry ingredients, then add in buttermilk and egg. Mix batter and pour into hot greased skillet.
  3. Bake for 20-30 minutes until golden brown.
