Bacon-Cornmeal Waffles

A delightful dish that fuses two classic breakfast favorites into one! Consider topping them with melted cheese, or if sweet & savory is more your thing, perhaps try it with honey. Goes well with eggs, coffee, and fresh fruit. Please consider leaving a picture or comment if you decide to try this recipe!

Serves: 6 Waffles


Ingredients
2 Eggs      View Available Products
1 3/4 cups Milk      View Available Products
7/8 cup All-purpose flour      View Available Products
2 1/2 teaspoon Baking powder
1 tablespoon Sugar
1/2 teaspoon Salt
1 cup Yellow cornmeal      View Available Products
1/4 cup Bacon fat
6-12 slices of Bacon      View Available Products
Honey for topping if desired      View Available Products
Cheese for topping if desired      View Available Products
Eggs make a good side dish      View Available Products
As does fruit such as strawberries      View Available Products
Or blueberries      View Available Products
And a good cup of coffee pairs well with nearly everything!      View Available Products

Step by Step Instructions
  1. Beat the eggs and add the milk. In a separate bowl sift the flour, baking powder, sugar, and salt together. Add the cornmeal to the dry ingredients and stir in the milk and egg mixture. Add the bacon fat.
  2. But the slices of bacon into halves or quarters. After pouring the batter into the waffle iron, place the bacon on each waffle iron section.
  3. Top with melted cheese, honey, or your favorite topping. Serve with eggs, coffee, and/or fresh fruit.
