Marinated Flounder Fillets

A relatively easy to prepare recipe that can be made with the fresh, local, wild caught flounder available from Prossers Seafood at Market2Go. A few vegetable side dish suggestions for this recipe are asparagus, broccoli, potatoes, or spinach. Please consider leaving a picture or comment if you decide to try this recipe!

2 pounds Flounder fillets      View Available Products
1 cup Tarragon vinegar
1/2 cup Yellow cornmeal      View Available Products
1/2 cup Flour      View Available Products
1/4 teaspoon Salt
1/8 teaspoon Pepper
1/4 cup Butter      View Available Products
Serve with asparagus      View Available Products
Or broccoli      View Available Products
Or potatoes      View Available Products
Or spinach      View Available Products

Step by Step Instructions
  1. Marinate the flounder in the tarragon vinegar for 10 minutes.
  2. Drain, then coat in a mixture of cornmeal, flour, salt, and pepper.
  3. Saute the flounder in butter until it is golden brown (about 4 minutes on each side). Enjoy with asparagus, broccoli, potatoes, or spinach.
