Crispy Italian Baked Eggplant

These delicious crispy eggplant slices work great as either served plain as a side dish or as a base for toppings like tomato sauce and/or melted cheese. Please consider leaving a picture or comment if you decide to try this recipe!

Serves: 6-8

1 large Eggplant (skin on, cut into half inch slices)      View Available Products
1 cup Bread crumbs covered in Italian seasoning      View Available Products
1/2 cup Grated Parmesan cheese      View Available Products
1/4 teaspoon Paprika
1/2 teaspoon Oregano      View Available Products
1/2 teaspoon Granulated garlic or garlic poweder
1/4 cup Melted butter      View Available Products
1/4 cup Olive oil

Step by Step Instructions
  1. Preheat oven to 400 degrees. Lightly sprinkle salt on both sides of the eggplant slices. Put the salted eggplant slices on paper towel and allow to sit for 30 minutes. Meanwhile, combine breadcrumbs, cheese, and spices in a bowl. In a different bowl, combine the oil and melted butter.
  2. Dip the eggplant slices in the butter and oil mixture, then into the breadcrumb mixture, making sure to evenly coat both sides. Place eggplant slices on a baking sheet that has been lined with parchment paper.
  3. Bake for 15 minutes, then flip onto the other side then bake for another 5 to 10 minutes (they should be nice and crispy when they're finished).
