Georgia Shrimp and Radish Salad

Ingredients
2 tablespoons
Olive oil
1 teaspoon
Salt (divided)
3/4 teaspoon
Black pepper (divided)
1/2 cup
Diced fennel bulb
1/4 cup
Orange juice
2 tablespoons
Mayonnaise
Step by Step Instructions
- Peel and devein shrimp, then pat them dry. Saute them at a medium-high setting for about 4 minutes.
- Combine shrimp, olive oil, 1/2 teaspoon salt, 1/2 teaspoon, the radish slices, green onion slices, and fennel in a large bowl. Set aside.
- Whisk together orange juice, honey, mayonnaise, mint, and the remaining salt and pepper. Poor this combination over the shrimp mixture and toss. Serve chilled with extra mint for garnish.
