Georgia Deep Dish Peach Pie

Ingredients
Pastry pie crust
1 cup
Brown sugar
3/4 cup
Water

Thickly sliced lemon rind and all
Step by Step Instructions
- Grease the baking pan and line it with pastry and put in the peaches. In a saucepan mix the flour, sugar butter, water, and lemon.
- Bring the contents of the saucepan to a boil and pour it over the peaches. Roll the remaining pastry dough 1/4 inch thick and cut out circles with a biscuit cutter.
- Slit a piece in the center of each circle and place them atop the peaches. The slices should overlap, but still allow steam to escape. Bake for about 40 minutes. Pairs well with both ice cream and coffee.
