Baked Flounder with Tomatoes and Basil

A simple but refined dish that can be made with the local wild caught flounder and fresh produce available on Market2Go. Please consider leaving a picture or comment if you decide to try this recipe!

Serves: 4

1 pound Very ripe tomatoes      View Available Products
4 cloves Garlic, minced      View Available Products
2 tablespoons Extra virgin olive oil      View Available Products
2 tablespoons Lemon juice
2 tablespoons Fresh basil, thinly sliced      View Available Products
Salt and pepper to taste
4 Boneless flounder fillets      View Available Products

Step by Step Instructions
  1. Preheat oven to 425. In a large baking dish toss the tomatoes, garlic, olive oil, lemon juice, and basil together. Bake this mixture for 5 minutes.
  2. Season the flounder with salt and pepper to taste, then arrange it over the tomato mixture.
  3. Roast the flounder and tomato mixture for about 10 more minutes, then serve.
