Okra Summer Salad

Ingredients
1 can
Black beans, drained and rinsed
Salt and pepper to taste

Ripe avocado
Step by Step Instructions
- Blanch the okra in boiling water for about 30 seconds, then drain and allow it to reach room temperature. In the meantime, drain and rinse the beans. Cut the okra into 1/2 inch pieces and discard the stems.
- In a large bowl, gently toss together okra, beans, corn, olive oil, salt, and pepper.
- Chill for 30 minutes, and gently toss the avocado into the mix right before serving.
