Okra Summer Salad

This easy to prepare, vibrantly colored chilled salad is a great way to enjoy summer vegetables! Please consider leaving a picture or comment if you decide to try this recipe!

Serves: 8

1 pound Okra, cut into 1/2 inch pieces      View Available Products
1 can Black beans, drained and rinsed
1 Ear of corn ( off the cob)      View Available Products
1 Large onion (or multiple smaller ones)      View Available Products
1 pound Cherry tomatoes      View Available Products
3 tablespoons Extra virgin olive oil      View Available Products
Salt and pepper to taste
1 Ripe avocado

Step by Step Instructions
  1. Blanch the okra in boiling water for about 30 seconds, then drain and allow it to reach room temperature. In the meantime, drain and rinse the beans. Cut the okra into 1/2 inch pieces and discard the stems.
  2. In a large bowl, gently toss together okra, beans, corn, olive oil, salt, and pepper.
  3. Chill for 30 minutes, and gently toss the avocado into the mix right before serving.
