Roasted Zucchini and Tomatoes

A great summer vegetable recipe that goes well over rice or pasta, or as a side dish alongside chicken or fish. Please consider leaving a picture or comment if you decide to try this recipe!

Serves: 4

3 cups Chopped zucchini      View Available Products
1 cup Chopped tomatoes      View Available Products
1 cup Chopped banana peppers (optional)      View Available Products
2 tablespoons Olive oil      View Available Products
1/2 teaspoon Salt
1 teaspoon Italian seasoning
1/4 teaspoon Pepper
1 teaspoon Crushed garlic      View Available Products
2 tablespoons Grated Parmesan cheese
Can be served with rice
Or pasta
Or chicken      View Available Products
Or fish      View Available Products

Step by Step Instructions
  1. Preheat oven to 400 degrees, and spray a cooking sheet with nonstick cooking spray.
  2. Toss the ingredients together in a large bowl, then put the mixture onto the cooking sheet.
  3. Cook for 30 minutes, then flip and bake for 10 minutes more. Serve over rice or pasta, or as a side dish alongside chicken or fish.
