Beef Liver Dumplings

Serves: 8-10
Ingredients
1 teaspoon
Salt
1/2 teaspoon
Ground coriander
1/2 teaspoon
Pepper (divided)
1/4 teaspoon
Baking powder
5 14-1/2 ounce cans
Beef broth
1/2 cup
Corn starch
Step by Step Instructions
- Place the liver, onion, salt, a teaspoon of sage, the coriander, basil, and 1/4 teaspoon of pepper into a food processor and blend them together until the mixture is smooth.
- Add the flour, baking powder, egg whites and egg yolk into the liver mixture and blend until the mixture is smooth and thick.
- In a Dutch oven, combine the broth, cornstarch, and the remaining sage and pepper and bring to a rolling boil whilst stirring constantly.
- Reduce to a gentle boil and drop the liver batter into it in heaping spoonfuls. Boil the dumplings uncovered for about 20 minutes, stirring occasionally. Serve the dumplings in beef broth.
