Spaghetti Squash Cheesy Bread

Ingredients
Salt & pepper to taste
1/2 cup
Grated Parmesan cheese
1/4 cup
Cornstarch
Pinch of red pepper flakes
2 teaspoons
Freshly chopped parsley
Marinara sauce for dipping
Step by Step Instructions
- Preheat oven to 400 degrees and drizzle the squash slices with oil, salt, and pepper. Place the halves cut side down on a baking sheet and roast for 35 minutes. After it has cooled slightly, scoop the squash innards and break up the squash strands and remove excess moisture from them using a dishcloth. Increase oven temperature to 425 degrees.
- Place the squash into a large bowl along with eggs, garlic, oregano, 1 cup of mozzarella, the Parmesan, and the cornstarch. Add more salt and pepper. Mix until thoroughly combined.
- Place the squash "dough" on a lined baking sheet and pat it into a crust of sorts, and bake for 25 minutes.
- Sprinkle with the remaining mozzarella, red pepper flakes, and parsley, then bake for 10 more minutes. Slice into pieces and serve with marinara sauce for dipping.
