Spaghetti Squash Cheesy Bread

Serves: 6

1 Spaghetti squash (halved with seeds removed)      View Available Products
1 tablespoon Olive oil      View Available Products
Salt & pepper to taste
2 Eggs      View Available Products
2 cloves Garlic (minced)      View Available Products
1/2 teaspoon Dried oregano (store bought or homemade)      View Available Products
3 cups Shredded mozzarella cheese, divided      View Available Products
1/2 cup Grated Parmesan cheese
1/4 cup Cornstarch
Pinch of red pepper flakes
2 teaspoons Freshly chopped parsley      View Available Products
Marinara sauce for dipping

Step by Step Instructions
  1. Preheat oven to 400 degrees and drizzle the squash slices with oil, salt, and pepper. Place the halves cut side down on a baking sheet and roast for 35 minutes. After it has cooled slightly, scoop the squash innards and break up the squash strands and remove excess moisture from them using a dishcloth. Increase oven temperature to 425 degrees.
  2. Place the squash into a large bowl along with eggs, garlic, oregano, 1 cup of mozzarella, the Parmesan, and the cornstarch. Add more salt and pepper. Mix until thoroughly combined.
  3. Place the squash "dough" on a lined baking sheet and pat it into a crust of sorts, and bake for 25 minutes.
  4. Sprinkle with the remaining mozzarella, red pepper flakes, and parsley, then bake for 10 more minutes. Slice into pieces and serve with marinara sauce for dipping.
