Butternut Coconut Curry

This bright and flavorful recipe is an easily prepared and a great way to make use of the locally grown carrots, onions, garlic, and squash available at Market2Go. Please consider leaving a picture or comment if you decide to try this recipe!

Ingredients
1 cup Chopped carrots
1 Chopped small onion
1 tablespoon Olive oil      View Available Products
1 1/2 teaspoons Brown sugar
1 1/2 teaspoons Curry powder
1 Minced garlic clove      View Available Products
1/2 teaspoon Ground Cinnamon
1/4 teaspoon Ground Ginger
1/8 teaspoon Salt
1 Butternut squash (cut into cubes)      View Available Products
2 1/2 cups Vegetable broth
3/4 cups Coconut milk
1/2 cup Uncooked rice

Step by Step Instructions
  1. Saute the carrots and onion in oil until the onion is tender, then add the brown sugar, curry, garlic, cinnamon, ginger and salt. Cook for a few more minutes, then set aside.
  2. Combine the butternut squash, broth, coconut milk, rice and the carrot mixture in a slow cooker. Cook covered for 4 to 5 hours
