Sweet Potato Soup

This rich and thick soup is a great way to use the locally grown sweet potatoes available at Market2Go. Please consider leaving a picture or comment if you decide to try this recipe!

Serves: 4

1 cup Chopped celery
1/2 cup Chopped onion      View Available Products
1 tablespoon Oil      View Available Products
3 Peeled and cubed sweet potatoes      View Available Products
3 cups Chicken or vegetable broth
1 Bay leaf      View Available Products
1/2 teaspoon Dried basil (store bought or homemade)      View Available Products
1/4 teaspoon Salt

Step by Step Instructions
  1. Saute the celery and onions in a Dutch oven in the oil until they are tender. Then add all of the remaining ingredients and bring the mixture to a boil over medium heat. Reduce the heat and simmer the soup for 25 to 30 minutes.
  2. Discard the bay leaf and allow the soup to cool slightly.
  3. Blend the soup in a blender (in batches if necessary) until it is smooth. Return the soup to the pot and reheat it before serving.
