Persimmon Chestnut Spice Cookies

2 Ripe persimmons (stemmed and quartered)      View Available Products
1 teaspoon Baking soda
2 cups Flour      View Available Products
1/2 teaspoon Cinnamon
1/2 teaspoon Ginger
1/4 teaspoon Nutmeg
1/2 teaspoon Salt
1 Egg      View Available Products
1 cup Sugar
1 stick Butter      View Available Products
1 cup Dried cranberries
1 cup Chopped chestnuts      View Available Products

Step by Step Instructions
  1. Put the persimmons and the baking soda and puree. Set the mixture aside.
  2. Sift together the flour, cinnamon, ginger, nutmeg, and salt. Set the mixture aside.
  3. Cream the butter and sugar together, mix in the egg and persimmon mixture, then stir in the flour mixture, and finally stir in the cranberries and chestnuts.
  4. Preheat the oven to 350 degrees. Scoop the cookies onto a cookie sheet covered with a silicone mat. Bake for 12 to 15 minutes.
