Lemon Chicken & Rice Soup

2 tablespoons Olive oil      View Available Products
2 pounds Boneless skinless chicken breasts (cut into 1/2-inch pieces)      View Available Products
14 1/2 ounces Chicken broth (store bought or homemade)
8 cups Swiss chard (chopped)      View Available Products
OR kale      View Available Products
OR spinach      View Available Products
2 Carrots (chopped)      View Available Products
1 Onion (chopped)      View Available Products
1 Lemon (halved and sliced)      View Available Products
4 teaspoons Grated lemon zest      View Available Products
1/2 teaspoon Pepper
4 cups Cooked rice

Step by Step Instructions
  1. Heat a tablespoon of oil in a skillet over medium high heat. Brown half of the chicken and transfer it to a 6 quart slow cooker. Repeat with the other half of oil and chicken.
  2. Add the broth, greens of choice, carrots, onion, lemon, zest, and pepper to the slow cooker. Cook the mixture for 4 to 5 hours.
  3. Stir in the rice and heat the mixture through.
