Easy Salmon Soup

Serves: 4

2 tablespoons Olive oil      View Available Products
4 Green onions (chopped)      View Available Products
1/2 Of 1 bell pepper (chopped)      View Available Products
4 Garlic cloves (minced)      View Available Products
1 ounce Fresh dill (chopped and divided)      View Available Products
5 cups Chicken broth
1 pound Gold potatoes (thinly sliced)      View Available Products
1 Carrot (sliced)      View Available Products
1 teaspoon Dried oregano (homemade or store bought)      View Available Products
3/4 teaspoon Ground coriander
1/2 teaspoon Ground cumin
Salt & Pepper to taste
1 pound Salmon fillet (skin removed, cut into chunks)      View Available Products
Juice & zest of 1 lemon      View Available Products
Bread for serving      View Available Products

Step by Step Instructions
  1. Heat the oil in a pot, then add the green onions, bell pepper, and garlic. Cook at medium-high heat for 3 minutes, stirring frequently. Add half of the dill and stir it in well.
  2. Add the chicken broth, potatoes, carrots, spices, and seasoning. Bring the mixture to a rolling boil, then lower the heat to medium and let it cook for 5 minutes.
  3. Season the salmon with salt and/or pepper, then add it to the soup. Lower the heat slightly and let it cook for 5 more minutes. Stir in the lemon juice, lemon zest, and the remaining dill.
  4. Serve with bread.
