Mediterranean Chard Salad with Lemony Dressing

This simple, yet filling salad is packed with vegetables and herbs, and the perfect accompanying dressing recipe is included below! Please consider leaving a picture or comment if you decide to try this recipe!

Vegetarian!

Ingredients
4 to 6 cups Chard (cut into small pieces)
1 Bell pepper (thinly sliced)
4 Radishes (sliced)
1/2 of 1 Cucumber (sliced)
6 Cherry tomatoes (sliced)
OR a whole tomato diced into small pieces      View Available Products
1 Avocado (sliced)
1/4 cup Olives
1 cup Cooked chickpeas
1/2 cup Cilantro      View Available Products
OR basil
OR mint      View Available Products
1/4 cup Slivered almonds for topping
Sprouts for topping
Crumbled feta for topping      View Available Products
FOR THE DRESSING:
2 tablespoons Lemon juice
1 teaspoon Lemon zest
1 or 2 Garlic cloves (finely grated)      View Available Products
1 teaspoon Honey      View Available Products
1/4 cup Olive oil      View Available Products
Salt & Pepper to taste

Step by Step Instructions
  1. Place the chard, pepper, radishes, cucumber, tomato, avocado, olives, chickpeas, and the herb of your choice into a bowl and toss the ingredients together until they are well combined.
  2. Whisk all the dressing ingredients together in a separate bowl. Pour it over the salad.
  3. Top the salad with salt, pepper, and more lemon if desired. Sprinkle the almonds, sprouts, and feta over the top of the salad.
