Tarragon-Dijon Pork Chops

Step by Step Instructions
- Preheat your oven to 400 degrees. Apply the garlic powder and pepper to the pork chops. Heat 1 tablespoon of oil in an ovenproof skillet at medium heat. Brown the pork chops on both sides, then remove them from the pan.
- In the same skillet, heat the remaining oil over medium high heat and cook the mushrooms and green onions for 3 minutes, stirring constantly. Place the pork chops onto the mushroom mixture and bake uncovered for about 9 minutes.
- While the pork chops cook, Mix the mustard, hot sauce, and red wine (if using) in a bowl. Remove the pork chops from the oven, spread the mixture over them and bake them for 2 more minutes. Sprinkle them with tarragon before serving.
