Mixed Bean and Bell Pepper Burger

Serves: 4-6

1 small Bell pepper (finely chopped)      View Available Products
1/2 of 1 small Jalapeno (finely chopped)      View Available Products
1 small Onion (finely chopped)      View Available Products
2-3 cloves Garlic (finely minced)      View Available Products
1/2 cup Spinach (wilted, chopped, and excess water squeezed out)      View Available Products
1/2 cup Black beans
1/2 cup White beans
1/2 cup Chickpeas
1/4 cup Walnuts (or other nuts) (chopped)      View Available Products
1/2 to 3/4 cup Rolled oats
2-3 tablespoons Breadcrumbs
1 teaspoon Chili powder
1 teaspoon Ground cumin
1 teaspoon Dried oregano      View Available Products
1/2 teaspoon Red chili flakes (optional)
1 tablespoon Cilantro (finely chopped)
1 tablespoon Egg replacer (whisked with 3 tablespoons of water ()
Salt and pepper to taste

Step by Step Instructions
  1. Heat 1 tablespoon of olive oil in a pan and saute the onions, garlic, jalapeno, red pepper, and spinach until the onions are translucent. Add the chopped nuts and saute for 2 more minutes. Remove from the pan and allow to cool.
  2. In a mixing bowl, mash the beans, leaving a few whole for texture. Add the saute mixture, oats, breadcrumbs, chili powder, cumin, dried oregano, chili flakes, and cilantro. Season with salt & pepper, then mix well. Add the egg replacer, then shape the mixture into patties. Place the patties on a baking sheet and refrigerate for 30 minutes.
  3. Heat 1 tablespoon of olive oil in a pan and place the patties in gently and cook for 2 to 3 minutes per side. Serve with toppings of your choice.
