Mixed Berry Pancakes

Ingredients
Raspberries

Maple syrup

Vanilla bean (split)
Step by Step Instructions
- Place the flour in a large bowl, make a well in the center, add the egg & buttermilk and stir until well combined. Set aside for 30 minutes to rest.
- Melt half the butter in a frying pan over medium high heat. Pour the batter into the pan in 1/4 cupfuls, then sprinkle in some frozen berries. Cook for 1 minute on both sides. Transfer the pancakes to a covered plate and repeat until all the batter is used up. Grease the pan between batches.
- Place the maple syrup in a saucepan. Scrape the vanilla seeds into the maple syrup and add the bean. Cook over low heat for 2 minutes, stirring constantly.
- Serve the pancakes with the vanilla syrup and additional fresh berries.
