Spicy Chili-Carrot Hot Sauce

A spicy sweet and savory sauce that uses locally grown vegetables & herbs. It will most certainly add a kick to any dish! Please consider leaving a picture or comment if you decide to try this recipe!

Ingredients
1 teaspoon Olive oil      View Available Products
2 large Carrots (peeled & diced)      View Available Products
1 small Onion (chopped)      View Available Products
1 Serrano pepper (chopped)
1 long Red cayenne pepper (chopped)      View Available Products
3 cloves Garlic (chopped)      View Available Products
1 large Tomato (chopped)      View Available Products
1 teaspoon Rosemary (dried)      View Available Products
1 teaspoon Basil (dried)      View Available Products
1 teaspoon Ginger (dried)
Salt & pepper to taste
2 tablespoons White wine vinegar
1 cup Water

Step by Step Instructions
  1. Heat a saucepan to medium heat and add oil. Add the carrots, onion and both peppers and cook for 7 minutes. Add the garlic and let it cook for 1 minute. Add the tomato and let it cook for a couple more minutes, breaking the tomato apart as it cooks.
  2. Add the rosemary, basil, ginger, salt, pepper, vinegar, and water. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  3. Let the mixture cool, then put the sauce into a blender or food processor and blend until smooth. Strain the sauce and dispose of the pulp. Add any additional seasoning you feel is necessary. Bottle up the sauce and enjoy when ready.
