Flourless Cinnamon Pecan Cookies

This easy treat is gluten free, vegan, and compliant with the paleo diet. Please consider leaving a picture or comment if you decide to try this recipe!

Serves: 10 cookies

2 cups Raw pecans      View Available Products
1 1/2 teaspoons Cinnamon
10 Dates (pitted & soaked in water)
1/2 teaspoon Salt (optional)

Step by Step Instructions
  1. Preheat the oven to 350 degrees. Drain & discard the water the dates were soaking in.
  2. Place all of the ingredients into a blender or food processor and blend them into a dough.
  3. Scoop the dough out and form it into balls, then place the dough onto a lined baking sheet.
  4. Bake for 10 minutes and allow the cookies to fully cool before removing them from the baking sheet.
