Fish with Figs, Bacon, and Pecans

2 6 ounce Fish fillets      View Available Products
1 teaspoon Red pepper flakes
6 slices Bacon      View Available Products
1/4 cup White wine
2 Shallots (minced)
OR onions      View Available Products
4 ounces Fig preserves      View Available Products
2 cloves Garlic (minced)      View Available Products
1/4 cup Pecans (toasted)      View Available Products
Salt & pepper
Rice (for serving, as a side)
Salad (for serving, as a side)      View Available Products

Step by Step Instructions
  1. Preheat the oven to 350 degrees. Fry the bacon in an ovenproof skillet and set it aside. Leave the bacon grease in the pan and saute the shallots, garlic, and red pepper flakes for 2 minutes over medium heat.
  2. Cut the bacon into half inch pieces. Add the white wine, fig preserves, pecans and bacon to the skillet and reduce for 4 minutes. Pour this mixture into a bowl and set aside.
  3. Season both sides of your fish fillets with salt & pepper, then place them into the skillet. Cover the fish with the fig mixture and bake in the preheated oven for 20 minutes.
  4. Serve with a side of rice and a salad.
