Oyster Stew

Serves: 6

4 tablespoons Butter      View Available Products
3 tablespoons Flour      View Available Products
1 small Onion (chopped)      View Available Products
1 stalk Celery (chopped)
24 Oysters (shucked & drained)
2 cups Milk      View Available Products
1/4 cup Oyster liquor (reserved from the shucked oysters)
1 tablespoon Cajun seasoning
Salt & Pepper to taste
1/4 cup Parsley (chopped)      View Available Products
1/4 cup Green onions (chopped)      View Available Products
3 cloves Garlic (minced)      View Available Products
1 dash Hot sauce      View Available Products
Extra parsley (for garnish, if desired)      View Available Products
Extra butter (for garnish, if desired)      View Available Products
Chili flakes (for garnish, if desired)
Crackers (for serving, if desired)
Bread or rolls (for serving, if desired)      View Available Products
You can also add other ingredients to the stew while cooking, such as:
Shrimp      View Available Products
OR Sausage (crumbled)      View Available Products
OR Potatoes      View Available Products

Step by Step Instructions
  1. Melt the butter over medium-high heat in a large pot or pan. Stir in the flour to form the roux. Stir constantly for 5 minutes. This mixture should be light brown in color. Stir in the onion & celery and cook for 2 minutes.
  2. Stir in the milk, oyster liquor, Cajun seasonings and salt and pepper to taste. Cook, stirring constantly, for 3 to 4 minutes. Stir in the parsley, green onions, garlic, hot sauce and oysters. Bring to a boil and cook for 3 to 4 more minutes,
  3. Remove the pot from the heat and garnish as desired. Serve with bread or crackers
