Spicy Collard Slaw

A spicy vegan side dish that stars the locally grown collard greens, bell peppers, and onions that are available on Market2Go! Please note that while the recipe itself is vegan, some of the hot sauce choices listed below may not be. Please consider leaving a picture or comment if you decide to try this recipe!

Serves: 6 cups

1 1/2 pounds Collard greens      View Available Products
1 cup Bell pepper (preferably yellow, chopped)      View Available Products
1 cup Onion (preferably red, chopped)      View Available Products
1/3 cup Orange juice
1/8 to 1/4 teaspoon Hot sauce      View Available Products
1 Orange (peeled & chopped, optional)
Nutritional yeast
Red pepper flakes

Step by Step Instructions
  1. Remove the stems from the collard green leaves, roll the leaves into cylinders, then slice the cylinders into ribbons.
  2. Combine the collard ribbons, the chopped bell pepper, and chopped onion in a bowl. Whisk the orange juice & hot sauce together, pour the mixture over the collard mixture, then toss to coat.
  3. Add the chopped orange, nutritional yeast, and the red pepper flakes just before serving.
