Grilled Shrimp & Satsuma Salad

Ingredients
2 15 ounce cans Black beans (rinsed & drained)
6 Satsumas (peeled and separated into segments)      View Available Products
1/2 of a Bell pepper (preferably yellow) (Seeded & sliced)      View Available Products
1/2 of a small Onion (preferably red) (thinly sliced)      View Available Products
4 cups Arugula      View Available Products
OR other lettuce      View Available Products
1 pound Shrimp (peeled and grilled/broiled)      View Available Products
Fresh cilantro (for garnish)
2 tablespoons Satsuma juice      View Available Products
1 teaspoon Chili powder
1/2 teaspoon Ground cumin
1/2 teaspoon Sugar
1/2 teaspoon Salt
1/4 teaspoon Pepper
1/4 cup Olive oil      View Available Products
1/4 cup Fresh cilantro (chopped)

Step by Step Instructions
  1. Whisk the satsuma juice, chili powder, cumin, sugar, salt, black pepper, olive oil, and cilantro together.
  2. Toss the black beans, bell pepper, and onion with the satsuma dressing.
  3. Divide the salad greens between 4 plates, then spoon the bean mixture atop each. Top each with shrimp, then garnish with cilantro.
