Arugula & Mint Pesto

Ingredients
1/4 cup
Almonds (toasted)
1/2 ounce
Grated Parmigiano-Reggiano cheese
2 tablespoons
Lemon juice
2 tablespoons
Warm water
Step by Step Instructions
- Put the arugula, mint, toasted almonds, grated cheese, garlic, lemon zest, lemon juice, and salt into a food processor and pulse until the mixture is chopped.
- Drizzle the olive oil into the mixture while the food processor slowly blends the mixture.
- Add the warm water, then blend the mixture until it is well mixed and of a desirable consistency.
