Arugula & Mint Pesto

5 cups Arugula      View Available Products
1/2 cup Fresh mint leaves      View Available Products
1/4 cup Almonds (toasted)
1/2 ounce Grated Parmigiano-Reggiano cheese
2 cloves Garlic      View Available Products
1 teaspoon Lemon zest      View Available Products
2 tablespoons Lemon juice
3/4 teaspoon Salt      View Available Products
1/3 cup Olive oil      View Available Products
2 tablespoons Warm water

Step by Step Instructions
  1. Put the arugula, mint, toasted almonds, grated cheese, garlic, lemon zest, lemon juice, and salt into a food processor and pulse until the mixture is chopped.
  2. Drizzle the olive oil into the mixture while the food processor slowly blends the mixture.
  3. Add the warm water, then blend the mixture until it is well mixed and of a desirable consistency.
