Asparagus and Corn Fritters

Ingredients
3/4 cup
Shredded pepperjack cheese
Step by Step Instructions
- Saute the asparagus and corn in olive oil in a skillet over medium-high heat for 5 minutes.
- Put the asparagus & corn into a bowl and once cooled stir in the beaten eggs, the cheese, the flour, and the salt.
- Heat 2 tablespoons olive oil in the skillet over medium heat. Drop the batter into the skillet in 2 tablespoon increments. Flatten the batter and cook the fritters for 3 minutes on each side. Repeat in batches until the batter is gone.
