Arugula Pesto Pasta

A simple and delicious pasta dish made with fresh arugula! Please consider leaving a picture or comment if you decide to try this recipe!
Step by Step Instructions
- Cook the pasta in a pot of salted water according to package instructions for al dente.
- While the pasta cooks, pulse the arugula, garlic, 2/3 cup of pine nuts, the Parmesan cheese, and the lemon juice in a food processor until combined. Slowly drizzle the olive oil into the mixture as you pulse it again.
- Once the pasta is ready, drain the water and toss the pasta with the pesto and remaining pine nuts.
- Serve the pasta immediately, topped with additional Parmesan cheese if desired.
