Bake Summer Vegetables

Simple but delicious. This recipe uses so many of our vendors’ products!

Serves: 4-5

1 lb zucchini      View Available Products
1 lb eggplant      View Available Products
1 lb potatoes, peeled      View Available Products
1 onions, sliced      View Available Products
2 green peppers, sliced      View Available Products
1&1/2 lb tomatoes      View Available Products
1&1/2 cup olive oil      View Available Products
parsley, chopped      View Available Products
salt and pepper to taste

Step by Step Instructions
  1. Scrape and wash zucchini.
  2. Slice all vegetables in 1/2 inch pieces.
  3. Arrange in baking pan.
  4. Add olive oil and one cup hot water. Sprinkle with salt, pepper and parsley.
  5. Cover and bake in moderate oven for 1 1/2 hours.
  6. Uncover for the last 30 minutes. Serves 4-5.
