Hasselback Sweet Potatoes

Ingredients
1 teaspoon
Finely chopped fresh thyme leaves
1 clove
Garlic (grated)
1/4 teaspoon
Pepper
1
Scallion (white and green parts chopped)
Step by Step Instructions
- Preheat oven to 425 and line a baking sheet with aluminum foil. Make a series of 1/8-inch slices along each potato, each one slicing 2/3 of the way through their body
- Mix the melted butter, olive oil, chopped thyme, grated garlic, the salt, and the pepper together in a small bowl.
- Rub each of the potatoes with the butter mixture (make sure to get it into the slits as well).
- Roast the potatoes for 50 minutes or up to 1 hour. Halfway through the cooking time, remove the potatoes from the oven for a moment to gently fan the slits apart slightly with a fork before returning them to the oven to cook.
- Mix the yogurt and scallions with some salt & pepper to form a sauce.
- Serve the potatoes warm with the scallion sauce
