Spicy Savory Sweet Potato Casserole

Serves: 6 to 8
Ingredients
1 teaspoon
Chopped fresh rosemary
1 teaspoon
Chopped fresh thyme
3/4 teaspoon
Salt
1/4 teaspoon
Black Pepper
1/4 to 1/2 teaspoon
Cayenne pepper
1/4 cup
Panko breadcrumbs
Step by Step Instructions
- Bake the sweet potatoes until they are very soft, then once cooled, discard the skins and mash the potatoes with a fork. Put 5 cups of the mash into a mixing bowl.
- While the potatoes are baking, cook and crumble the bacon. Reserve 1 1/2 tablespoons of bacon grease.
- Cook the chopped onion in the bacon grease for 10 minutes and add the rosemary and thyme right before removing the pan from the heat.
- Beat the sweet potatoes, 2 tablespoons of butter, heavy cream, egg, salt, pepper, and cayenne pepper together until smooth.
- Stir the onion and herb mixture, 3/4 cup of Shredded Gruyere, and half of the crumbled bacon into the sweet potato mixture. Put the mixture into a greased casserole dish.
- Stir the melted butter, breadcrumbs, and pecans together. Top the casserole with this mixture and the remaining shredded Gruyere.
- Bake at 350 for 30 minutes, then broil for just long enough to brown the breadcrumb topping. Top with remaining crumbled bacon directly before serving.
