Bacon-Parmesan Stuffing

A recipe for cheesy meaty stuffing (or dressing, as we call it here)! Please consider leaving a picture or comment if you decide to try this recipe!

Serves: 6-8


Ingredients
1/2 cup Unsalted butter (divided) (plus some for the baking dish)      View Available Products
6 slices Thick cut bacon (chopped)      View Available Products
2 large Onions (chopped)      View Available Products
1 bunch Scallions thinly sliced (white and green parts separated)
OR green onions      View Available Products
Salt to taste
1 teaspoon Fresh rosemary (chopped)
3 cups Chicken broth
2 large Eggs      View Available Products
1 cup Grated Parmesan cheese      View Available Products
1/2 cup Fresh chopped parsley
Pepper to taste
2 pounds Stale bread (cut into cubes)      View Available Products

Step by Step Instructions
  1. Preheat oven to to 375 and butter a 3 quart baking dish.
  2. Cook the bacon in a skillet over medium high heat for 5 minutes stirring occasionally. Add 6 tablespoons of butter, the onions, the white pieces of scallion, and a bit of salt to the skillet and cook for 5 minutes.
  3. Stir in the rosemary, chicken broth, and more salt. Bring the mixture to a simmer, then remove the skillet from the heat.
  4. In a large bowl, whisk the eggs, then stir in the grated Parmesan, fresh parsley and pepper to preference. Stir in all but 2 tablespoons scallion greens, then stir in the breadcrumbs and the skillet mixture.
  5. Put the stuffing into the prepared baking dish and dot the top with the remaining butter. Cover the dish with foil and bake for 30 minutes. Uncover, then bake for 20 or 30 more minutes. Top with the remaining scallion greens before serving
