Lion's Mane Mushroom Gravy

Ingredients
2 cups Lion's mane mushrooms (trimmed and roughly chopped)      View Available Products
1 small Yellow onion (finely diced)      View Available Products
4 cloves Garlic (minced)
2 tablespoons Olive oil      View Available Products
1 tablespoon Nutritional yeast (optional)
2 tablespoons All purpose flour
2 cups Vegetable broth
1 teaspoon Tamari or soy sauce
1/4 teaspoon Dried thyme
1/4 teaspoon Dried sage
Salt & pepper to taste      View Available Products

Step by Step Instructions
  1. Heat the oil in a skillet over medium heat and saute the onion for 5 minutes. Add the mushrooms and cook for 5 more minutes.
  2. Reduce the heat to medium-low and add the garlic. Saute for an additional minute. Sprinkle the flour over the mixture and cook stirring for 1 or 2 minutes.
  3. Slowly pour in the vegetable broth, stirring constantly. Let cook for 5 minutes, continuing to stir for the duration.
  4. Stir the soy sauce, thyme, and sage into the skillet mixture, then taste and season with salt and pepper as desired. stir in the nutritional yeast if desired.
  5. Let simmer for 5 minutes, stirring occasionally. Remove the skillet from the heat and let cool slightly before serving.
