Thanks to Louisiana State University, the Hernandez variety is a sweet potato with light red skin, and the characteristic moist orange flesh. As with most sweet potatoes, Hernandez sweet potatoes do well baked, roasted, in soups, or fried. Very sweet and moist when cooked. Makes an especially great baking potato.

Red toned purple skin with a creamy white flesh that turns pale yellow when cooked. Grown right here in Statesboro and Freshly dug for you. The texture is starchier and dryer (in a good way like a russet potato), almost fluffy like a dense cake. We are harvesting some crazy jumbo sweet potatoes! They may have cracks or wonky shapes, but they’re loaded with delicious sweet potatoes flesh with less skin to deal with. This listing is for one sweet potato that weighs at least 2lbs, if not more! The potato will be either Vardaman or Hernandez variety. Their size does not affect their flavor. While they take longer to roast than “normal sized” sweet potatoes, that is my favorite way to cook them. I just cut them in half (or thirds) and there’s far less skin to deal with.
