Thanks to Louisiana State University, the Hernandez variety is a sweet potato with light red skin, and the characteristic moist orange flesh. As with most sweet potatoes, Hernandez sweet potatoes do well baked, roasted, in soups, or fried. Very sweet and moist when cooked. Makes an especially great baking potato.

Red toned purple skin with a creamy white flesh that turns pale yellow when cooked. Grown right here in Statesboro and Freshly dug for you. The texture is starchier and dryer (in a good way like a russet potato), almost fluffy like a dense cake.
