Almond Berry Coffee Cake

This cake is AMAZING. With that said what makes it so amazing is its moist, streusely, seasonal berry goodness. Since the blackberries have been so incredible this season from Jacobs Produce, I decided to share this recipe in lieu of the ending season. However, any in season berry will work just fine. Here we come blueberries!

Buttermilk-Lady Pea Soup with Bacon

This recipe from Southern Living calls for Lady peas, but other field peas like Sadandy, pink-eye, and zipper peas can be substituted.
Even served warm, buttermilk has a cooling effect on the palate, just right for summer meals.
Goes well with cornbread.

Classic Salmon Patties

This is the recipe for salmon patties that I grew up with. You can add your own variations, such as herbs, chives, or minced vegetables to it as well. Use your own preference of oil to cook with, like butter or olive oil. If you don’t have the salmon burger meat, you can shred a filet.

Also, you can use gluten-free Bisquick instead of flour, and it comes out the same.

French Toast

French toast – serve with fruit, bacon or sausage, grits, and coffee – all available from Market2Go and/or the Saturday Main Street Market.

Tips & Notes
This dish is a great way to use up bread that’s beginning to go stale. (The French name is pain perdu-for stale or otherwise “lost” bread)

The recipe can be found in the Apicius, a collection of recipes dating back to Imperial Roman times, where it is described as aliter dulcia (another sweet dish). The recipe says to slice fine white bread, crust removed, and break it into large pieces. Soak these pieces in milk and beaten egg, fry in oil, and cover with honey before serving.

Fresh Corn Cakes

This is a wonderful way to use the fresh corn coming in as a different side dish/bread/vegetable. When you get tired of corn on the cob (imagine that EVER happening with the delicious corn we have at the market!!) you can scrape some off and try out this recipe…everyone seems to love it! You can purchase the corn, eggs, milk, butter, flour, cornmeal, peppers and cheese at the Main Street Farmers Market!

Fruit Cobbler

Depending on how juicy you want your cobbler to be, either use the fruit as is (makes a drier cobbler) or make a fruit syrup with sugar in a saucepan (very juicy) or sprinkle a little sugar on the fruit and let sit for 30 minutes (moderate juice).

To make a gluten free cobbler, substitute a gluten free mix like Gluten-free Bisquick or King Arthur’s all purpose gluten-free baking mix instead of flour. The cobbler comes out just the same.

Green Tomato Pie

Found in the book Cracklin Bread and Asfidity by Jack and Olivia Solomon, a collection of Alabama folk recipes and remedies. You’ll need to find a recipe for pie crust or buy a ready-made one.

Some other recipes call for a mixture of flour and sugar to be put over the tomatoes, then dotted with butter.

Mrs. Turner's Squash Skillet

Found on “Twice Bloomed Wisteria” blog from a homeschooling mother who lives on a farm in Central Mississippi. She writes:
“A few years ago, my Momma said she wished she could find some green tinted patty pan squash so she could make Mrs. Turner’s Squash Skillet. Mrs. Turner is an older lady in town who was originally from somewhere else. She had some different ways of doing things than many of the people who were born and raised here. One of those different ways was planting patty pan squash when everyone else here only planted yellow squash. Mrs. Turner once shared her squash and recipe with my mother. I, of course, found seeds and planted them. When the squash was ready, I shared it with Mrs. Turner and Momma and she shared the recipe with me. Here is that recipe.
You can tell that this is a truly Southern recipe because sugar is added to vegetables. Sugar is added to everything here, EXCEPT the cornbread. Cornbread, by the way, is the perfect accompaniment to this squash dish. Anyway, if you feel uncomfortable adding sugar to vegetables, don’t do it or add less, which is what I do. The squash will still be good.
Here are some other things I know about summer squash. You may substitute any summer squash in any summer squash recipe. There will be subtle taste and consistency issues, but the recipe will not fail or taste terrible.”

Patatasagne

Lasagne made with organic heirloom potatoes in place of noodles. You can make it gluten free easily!

This can be vegetarian if you like. We use fresh grassfed beef in ours. It does contain cheese, so probably wouldn’t work well as a vegan dish.
