Classic Southern Cornbread is best made with a cast iron skillet. Let the skillet warm up in the oven and melt some butter in it so that a nice crust will form. Some versions of this recipe use bacon drippings instead of or in addition to the butter. Adjust the amount of buttermilk to make a thick batter.
You can also use self-rising cornmeal and omit the baking powder and soda.

Tips & Notes
This dish is a great way to use up bread that’s beginning to go stale.
The recipe can be found in the Apicius, a collection of recipes dating back to Imperial Roman times, where it is described as aliter dulcia (another sweet dish). The recipe says to slice bread, crust removed, and break it into large pieces. Soak these pieces in milk and beaten egg, fry in oil, and cover with honey before serving.
