Very simple but satisfying way to make acorn squash. I use parchment paper to line pan for easy clean up.
Works well with other winter squashes.

Lasagne made with organic heirloom potatoes in place of noodles. You can make it gluten free easily!
This can be vegetarian if you like. We use fresh grassfed beef in ours. It does contain cheese, so probably wouldn’t work well as a vegan dish.

Pecan butter is easy to make and tastes absolutely incredible! Feel free to to double or maybe even triple the amount of pecans in order to make a bigger batch (you may find it easier to toast the pecans in the oven at that point). Recipe yields 1 cup as written.
