Green Tomato Pie

Found in the book Cracklin Bread and Asfidity by Jack and Olivia Solomon, a collection of Alabama folk recipes and remedies. You’ll need to find a recipe for pie crust or buy a ready-made one.

Some other recipes call for a mixture of flour and sugar to be put over the tomatoes, then dotted with butter.

Honey-Sweetened Chestnut Butter

Like so many nut butters, this one is good smeared on toast or crackers. It’s also a nice filling for small shortbread cookies or as an addition to a platter of cheeses.

Italian Meatballs

Who doesn’t love meatballs? Especially with our delicious local beef. They are so versatile. Serve them as an appetizer or with pasta as a main course.. I recommend a hearty, thick spaghetti like Buccanti #6. It is a hollow spaghetti noodle, which allows the juices in the sauce to be held tightly in the thin hollow tube. Really worth it. But don’t forget to make my Extra Veggie Marinara recipe to go along with these delicious round delights. Make extra because you know you love a good oven toasted meatball sub for a quick leftover lunch or diner.

Kickin' Salsa

This is a great, tasty salsa to try on your friends! My friend Betsy who grew up in New Mexico is a gourmet Mexican cook and she made it for us! Make your own Dog Food

I used these guidelines to make a batch of food that would provide about a two week supply for my 50-lb dog, served twice-a-day along with half a cup of dry food. Use any combination of quality ingredients, striving for the same kind of balance and variation you want in your own food. I recommend you talk with your vet and look for recipes on line.
I cook meat, veggies, and rice separately, then combine into baking pan and cook like a casserole to achieve firmer consistency.
Eliminate or minimize onion and garlic as they can be toxic to some dogs.
