SPICY SALMON WITH BOK CHOY AND RICE
Cook 1 cup long grain white rice. Combine 2 tbsp. honey, 1 tbsp. soy sauce, and 1/4 tsp. crushed red pepper. On a foil lined rimmed baking sheet, broil salmon filet until opaque, about 8-10 min. basting with the honey mixture during the last 3 min. Steam 1 lb. bok choy cut into pieces, until tender, 8-10 min. Serve bok choy with salmon and rice.
