I love carrots…and we have some beautiful ones at Statesboro Market2Go! While I love to roast them or boil them (adding a little sweetener and ginger), I have to admit my favorite way to eat carrots is in carrot salad. A sweet lady at our church made a carrot salad that Stacey really liked, so I asked for her recipe. After she gave me the general ingredients (a little of this, then some of that), she asked me if I had a pretty bowl. She obviously doesn’t know my mother if she had to ask if I have a pretty bowl!! (My mother has given me MANY beautiful bowls over the years!) What I’ve found is even more important than a pretty bowl when making carrot salad is a food processor. Grate your carrots in the food processor, add a little mayo, a little sweetener, some raisins or craisins, and some chopped walnuts or pecans (some people also add drained pineapple tidbits). Delicious!! Don’t add too much mayo — it should seem just a little dry — because the carrots will add their own moisture as they sit. Then be sure to serve it in a PRETTY BOWL!!
