This roast is flavored by coffee-enriched gravy! Serve the roast with a side of bread, potatoes, or veggies like asparagus, Brussels sprouts, or broccoli. Please consider leaving a picture or comment if you decide to try this recipe!

Ingredients

  • 5 cloves Garlic (minced)
  • 1 1/2 teaspoons Salt
  • 3/4 teaspoon Pepper
  • 3 or 3 1/2 pounds Boneless chuck roast
  • 1 1/2 cups Strong brewed coffee
  • 2 tablespoons Cornstarch
  • 1/4 cup Cold water
  • Side suggestions include:
  • Bread
  • Mashed potatoes
  • Asparagus
  • Broccoli
  • Brussels sprouts

Instructions

    Mix the garlic, salt, and pepper together and rub the mixture over the roast. Put the roast into a 4-qt. slow cooker.

    Pour the coffee around the roast, cover it, then cook on low for 8 to 10 hours.

    Pull out the roast and set it aside. Pour the cooking juices into a saucepan and skim off the fat that rises. Bring to a boil

    Mix the cornstarch and water in a bowl until smooth, then gradually stir it into the cooking juices. Bring to mixture to a boil again and cook for 1 or 2 minutes to thicken.

    Serve the roast with gravy and sides of choice!
