Ingredients

  • 8 eggs
  • ⅓ cup milk
  • 1 clove garlic (minced)
  • ¼ teaspoon Dijon mustard
  • ½ teaspoon each salt and pepper
  • 2 to 4 tablespoons minced fresh dill, basil, or sage
  • 2 shredded kale leaves
  • 1 cup halved cherry tomatoes (or larger cut up tomatoes)
  • Or butternut squash cubes
  • Or sweet potato cubes
  • Or diced bell peppers
  • ¼ cup sliced scallions
  • ⅓ cup crumbled feta cheese
  • Oil to grease your muffin tin

Instructions

Preheat the oven to 350 degrees and grease the muffin pan.

Prepare the herbs and vegetables

Whisk the eggs, milk, minced garlic,mustard, most of the herbs (whichever one you’re using), and the salt and pepper together. Pour a little into each muffin cup.

Evenly divide the kale, tomatoes (and/or other vegetables), scallions and feta, into each muffin cup.

Pour the remaining egg mixture over each one

Bake for about 20 minutes

Garnish with the remaining herbs of choice and season further to taste

A twist on a traditional cookout classic, these delicious deconstructed cheeseburger kebabs are made with beef and bacon from local farms, fantastic fresh local produce, and amazing artisan pickles

🥕 Featured Local Ingredients

Ground beef from Hunter Cattle, Jacobs Produce, Southern Swiss Dairy, and Westwood Angus Beef ⭐ Plus Cheese from Bootleg Farms, Onions from Jacobs Produce and Poor Robin Gardens, Pickles from Justin’s B&S and Ma’s Country Pantry, Bacon from Hunter Cattle, Tomatoes from Jacobs Produce and Poor Robin Gardens, Peppers from Hazelnut Pastures, Jacobs Produce, Ole Mcdonnell's Farm, and Poor Robin Gardens, Sauces from Ma's Country Pantry, and Greens from Hazelnut Pastures and Poor Robin Gardens!

Ingredients

  • 1 pound ground beef
  • 1 teaspoon kosher salt
  • ¾ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • ½ of an onion (cut into bite sized pieces)
  • 16 bread and butter chip pickles
  • 5 slices bacon
  • 1 cup cherry tomatoes (or cut up larger ones)
  • 2 burger buns (each cut into 16 pieces)

Instructions

Slice the bacon, vegetables, and buns. Soak the wooden skewers in water for 30 minutes.

Place the ground beef into a bowl and season with salt and pepper, then gently knead in the cheese until well combined.

Using a 2 tablespoon cookie scoop, portion out the beef mixture into 16 small patties (shape them slightly)

Preheat grill to 450

Onto each skewer, put a piece of bun bottom, a bacon portion, a burger patty (sitting horizontally), another bacon, onion, pickle tomato, onion, bacon, bun top. (and other mix-ins if desired) (see below)

Cook for 2 to 4 minutes on each side (ensure the patties are cooked through), then serve warm on a bed of greens and with your favorite burger condiments

Sprinkle with Parmesan cheese and fresh herbs before serving if desired

Soaking the wooden skewers prior to grilling prevents them from catching fire from the heat of the grill!

Try adding or substituting different types of tomatoes, pickles and cheese, adding mix-ins like peppers, and experimenting with different sauces for serving!

🥕 Featured Local Ingredients

Olive oil from Terra Dolce, Sweet potatoes from Poor Robin Gardens, chicken from Hunter Cattle or Hazelnut Pastures, bell peppers from Jacobs Produce and Poor Robin Gardens, zucchini from Poor Robin Gardens and Ole Mcdonnell's Farm, yellow squash from Poor Robin Gardens, and herbs from Hazelnut Pastures

Ingredients

  • 1 medium sized sweet potato (peeled and diced)
  • 3 Tablespoons olive oil (divided)
  • 1 ¼ Teaspoons salt (divided)
  • ¾ teaspoons pepper (divided)
  • 1 ¼ pounds Boneless skinless chicken breasts (cooked, cut into pieces)
  • 2 cups Broccoli florets
  • 1 Bell pepper (cored and cut into ½ inch pieces)
  • 1 Zucchini (halved lengthwise, then cut into 1/2-inch-thick half moons)
  • 1 Yellow squash (halved lengthwise, then cut into 1/2-inch-thick half moons)
  • Zest and juice from 1 lemon
  • 2 ½ teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ cup Grated parmesan cheese
  • Fresh herbs of choice

Instructions

Wash and cut vegetables, cook and cut up chicken if not using leftovers

Place the sweet potato cubes in a large bowl and drizzle with 1 tablespoon olive oil and sprinkle with ¼ teaspoon kosher salt and ¼ teaspoon black pepper.

Toss to coat, then spread the cubes out in a single layer on the baking sheet. Bake for 10 minutes.

Place the chicken and other vegetables into the bowl and drizzle with the remaining oil, lemon juice and zest, and the seasonings and toss to coat.

Add the chicken/vegetable mixture onto the pan and spread into an even layer.

Bake for 15 to 20 minutes, stirring about 10 minutes into cooktime

Sprinkle with Parmesan cheese and fresh herbs before serving if desired

A savory-sweet fruit spread made from marvelous Muscadine grapes!

Muscadine grapes from Ma’s Country Pantry or Poor Robin Gardens, olive oil from Terra Dolce, and bread from Daisy Mae Farms or Sweet Myrtle Bakery

Ingredients

  • 4 cups Muscadine grapes (halved and seeded)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Slices of bread for serving

Instructions

Wash, halve, and remove the seeds from the grapes, preheat the oven to 400 degrees

Place the cut grapes on a sheet pan and sprinkle them with salt and pepper to taste

Drizzle the olive oil and toss the grapes together to ensure an even coating

Spread the grapes out evenly across the pan, then roast them for about 30 minutes

Let the grapes cool, then serve or use as desired
