Roasted Muscadine Grapes

A savory-sweet fruit spread made from marvelous Muscadine grapes!

🥕 Featured Local Ingredients

Muscadine grapes from Ma’s Country Pantry or Poor Robin Gardens, olive oil from Terra Dolce, and bread from Daisy Mae Farms or Sweet Myrtle Bakery

Ingredients

  • 4 cups Muscadine grapes (halved and seeded)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Slices of bread for serving

Instructions

Wash, halve, and remove the seeds from the grapes, preheat the oven to 400 degrees

Place the cut grapes on a sheet pan and sprinkle them with salt and pepper to taste

Drizzle the olive oil and toss the grapes together to ensure an even coating

4

Spread the grapes out evenly across the pan, then roast them for about 30 minutes

5

Let the grapes cool, then serve or use as desired

A vivid vegetarian dish made with sensational seasonal farm fresh vegetables from our fantastic local farmers!

🌱 Featured Local Ingredients

Zucchinis, eggplants, potatoes, onions, peppers, tomatoes from our local farmers (Hazelnut Pastures, Jacobs Produce, Ole Mcdonnell's Farm, and Poor Robin Gardens) and Terra Dolce olive oil!

Ingredients

  • 1 pound of zucchini
  • 1 pound of eggplant
  • 1 pound of potatoes
  • 1 onion
  • 2 green peppers of your choice
  • 1 ½ pounds tomatoes
  • 1 ½ cups olive oil
  • 1 cup hot water
  • Parsley (chopped)
  • Salt and pepper to taste

Instructions

1

Wash the veggies, peel the zucchini and potatoes

Slice all vegetables in half inch pieces, then arrange them evenly in a baking pan

3

Add the olive oil and hot water to then pan, then season the vegetables with salt, pepper, and parsley to taste

Cover the baking pan and cook for 1 hour

5

Uncover and bake for 30 more minutes, then serve

Enjoy this dish on its own, as a pasta or soft taco mix-in, or over rice!
