
Watermelon Gazpacho
A chilly summertime treat made with seasonal produce! Try adding a dash of hot sauce if you want to add a bit of a kick! Please consider leaving a picture or comment if you decide to try this recipe!
Ingredients
- 8 cups Seedless watermelon (cubed)
- 1 medium sized Cucumber (peeled, seeded, and cut into pieces)
- 1 medium sized Tomato (quartered)
- 1/2 of a Red onion (peeled & quartered)
- 1/4 cup Basil leaves
- 2 tablespoons Red wine vinegar
- 1/4 teaspoon Salt
- a few dashes Hot sauce (optional)
- Olive oil (for garnish, if desired)
- Fresh basil (for garnish, if desired)
Instructions
- 1Blend the watermelon in a blender, pour it out into a large bowl, and set it aside.
- 2Put the cucumber, tomato, onion, and basil into the blender and blend until smooth. Pour the mixture into the bowl of watermelon and stir them together to form a smooth mixture.
- 3Stir in the vinegar, salt, and hot sauce if desired. Put the bowl into the fridge and let chill for 2 to 3 hours. Serve garnished with oil and fresh basil if desired.
