A chilly summertime treat made with seasonal produce! Try adding a dash of hot sauce if you want to add a bit of a kick! Please consider leaving a picture or comment if you decide to try this recipe!

Ingredients

  • 8 cups Seedless watermelon (cubed)
  • 1 medium sized Cucumber (peeled, seeded, and cut into pieces)
  • 1 medium sized Tomato (quartered)
  • 1/2 of a Red onion (peeled & quartered)
  • 1/4 cup Basil leaves
  • 2 tablespoons Red wine vinegar
  • 1/4 teaspoon Salt
  • a few dashes Hot sauce (optional)
  • Olive oil (for garnish, if desired)
  • Fresh basil (for garnish, if desired)

Instructions

    Blend the watermelon in a blender, pour it out into a large bowl, and set it aside.

    Put the cucumber, tomato, onion, and basil into the blender and blend until smooth. Pour the mixture into the bowl of watermelon and stir them together to form a smooth mixture.

    Stir in the vinegar, salt, and hot sauce if desired. Put the bowl into the fridge and let chill for 2 to 3 hours. Serve garnished with oil and fresh basil if desired.
