
Almond Milk & Fig Chia Pudding
A sweet vegan treat that uses fresh locally grown figs! Good for breakfast or as a treat! Please consider leaving a picture or comment if you decide to try this recipe!
Ingredients
- 15 grams Chia seeds
- 1/2 cup Almond milk
- A small amount of vanilla extract
- 50 grams Soy yogurt
- 3 tablespoons Granola (plus some for topping)
- 4 Figs (plus 1 for decoration)
- Fresh mint leaves (for garnish, if desired)
- Chopped nuts (for garnish, if desired)
Instructions
- 1Combine the chia seeds, almond milk, and vanilla extract in a container, stir them together, and cover the container with a lid. Let the pudding set in the fridge for 2 hours.
- 2Peel and mash 3 figs with a fork, and slice 1 of them.
- 3Put the fig slices onto the sides of a mason jar or glass. Add a layer of pudding, then the granola, then the mashed figs, then the soy yogurt, then the rest of the pudding.
- 4Top with additional granola, fig slices, nuts, and fresh mint leaves as desired.
